Easy Pineapple-dijon Garlic Chicken Recipe

I’ve been making an effort lately to do a bit more cooking in the kitchen and try a few easy and simple recipe’s
here is a simple one I came across when trawling the net for recipe’s that appeal to me.

its pretty healthy and simple, not to mention tasty, this is the original recipe, modify the amounts to suit yourself, 4 chicken breasts are rather large, i used chicken thigh fillets instead.

Ingredients

* 1/4 c honey .
* 1 (20 oz) can unsweetened pineapple slices .
* pepper .
* garlic powder (optional) .
* 3-4 tbsps oil .
* 2 tbsps minced fresh garlic (an use more, or to taste) .
* seasoning salt (can use regular salt) .
* 1 tbsp cornstarch .
* 1-2 tsp dried thyme (rubbed between fingers to release flavors) .
* 4 boneless skinless chicken breasts .
* 1/4 c Dijon mustard

Directions

* Step #1 Drain the pineapple, reserving juice, & cut the pineapple rings in half; set aside.
* Step #2 In a bowl, mix the cornstarch & 2 tbsps of pineapple juice until smooth; set aside.
* Step #3 In another bowl, mix/whisk together mustard, honey, garlic & remaining pineapple juice; mix well to mix; set aside while browning chicken.
* Step #4 Spice up chicken with thyme, seasoning salt (or regular salt) pepper & garlic powder (if using).
* Step #5 In a skillet brown the chicken on both sides in oil.
* Step #6 Add in the honey/mustard mixture to the pan; bring to a boil.
* Step #7 Reduce heat, cover & let simmer for 20 mins (longer if using bone-on chicken pieces) or until juices run clear.
* Step #8 Remove the chicken to a plate to keep warm.
* Step #9 Stir/whisk in cornstarch mixture to the pan; bring to a boil, & stir for about 2 mins.
* Step #10 Return chicken to the pan.
* Step #11 Top with pineapple slices, & heat through.

extracting outlook 2003 mail settings from another PC

These steps will help with extracting the outlook mail profile settings from the registry, I have now used this a couple of times when rebuilding windows PC that have crashed or suffered from the dreaded BSOD

you will need do to the following:

1. copy the ntuser.dat from the document and settings\ folder
(FYI: NTUser.dat gets loaded at logon and becomes HKEY_CURRENT_USER in regedit.)
2. Open regedit then highlight and expand the HKEY_USER key.
3. Select from the menu File>Load Hive. In the window that opens, navigate to the location of the NTUSER.dat, this is located in ?:\Document and Settings\Username folder on the drive you have slaved in (where ? = whatever the drive letter is for your old HDD and UserName is the user you want to import settings from)
4. Click on NTUser.dat and click OK, It will now ask for a name. I usually name it the same as the username but it really doesn’t matter.
(The name you provide should now be showing as a sub key under HKEY_USERS).
5. Now you can drill down to HKEY_USERS\NAME_YOU_PROVIDED\Software\Microsoft\Windows NT\CurrentVersion\Windows Messaging Subsystem\Profiles\Outlook
6. Right click this key and choose Export as .REG file.
7. Now highlight NAME_YOU_PROVIDED in HKEY_USERS and select File>UnLoad Hive.
8. Now open the saved reg file and replace all instances of “HKEY_USERS\NAME_YOU_PROVIDED” with “HKEY_CURRENT_USER\Target_User_Name” save and close the reg file.

9. Log in with Target_User_Name’s account Open regedit highlight HKEY_CURRENT_USER and export it to a reg file. (This is to backup your current settings incase something goes wrong.
10. After your back up is saved right click the reg file you saved previously and select Merge from the context menu. Click ‘OK’ to merge and you should get a message box stating sucessfully merged into registry.

just note that you will need the password re-enter the passwords to access the email accounts, the profile does not save passwords.

HOWTO: Create a new windows profile, and move existing settings from the old profile

I have decided to write an article on how you would go about creating a new Windows XP Profile when the current profile becomes corrupt, or may have moved to a different machine.

I do this quite frequently as I have to move data and settings from one machine to another for the job I do.
The steps outlined below well based on moving data from and old user profile to a new one on the same machine, the same steps can be used when moving from machine to another.

These steps rely on the fact that you have access to the administrator user/ or a user that has administrator rights on your computer, when you create the profile you cannot be logged in as the user your trying to move.

1. Ensure that you the user you want to create a new profile for is logged off the computer.
2. Logon as a user that has administrator rights on the computer
3. Open windows explorer and ensure that the show hidden files and folders is turned on, also untick hide extensions for known file types and hide protected operating system files is unticked.
4. locate you the documents and settings folder and expand, in here you will locate the user profile that holds your my documents/desktop icons and so forth, for example if you logon to Windows XP with the username Sam, then you should see a folder named SAM in the documents & settings folder
5. Rename the folder that has your login name on it ( you check this be checking the date on the folder), call it something like sam_old, Note: if you receive a message saying access denied, then reboot your computer and try the following steps again
6.Once you have renamed the user profile folder, logout and then login again, this will create the new user profile folder
7. Once the machine has logged in again, and the new profile has been created, you now have to begin the reconstruction of profile.
8. follow step 3 again.
9. Follow Step 4, but now when you look inside the document & settings folder you will now see the username_old(ie sam_old) folder, and a new one with your login/username ie(sam)
10. Now goto the folder and then copy the contents of the desktop folder to the desktop folder in the new profile, ie documents & settings\sam_old\desktop to documents & settings\sam\desktop
11. Do the same as steps as Step 10 except this time you will copy the my documents folder.
12. If you use Microsoft office applications and want to keep your dictionary and proofing then copy the custom.dic file from documents & settings\\application data\Microsoft\proof to documents & settings\\application data\Microsoft\proof
13. If you use the quicklaunch icons along in the taskbar, copy the quicklaunch folder from documents & settings\\application data\Microsoft\Internet Explorer\quicklaunch to the same location in the new profile.
14. Copy documents & settings\\favourites to the exact same location in the new profile.
15. If you use the autocorrect features in word/excel powerpoint then copy all the files from the documents & settings\\application data\Microsoft\Office to the new profile, also copy the documents & settings\\application data\Microsoft\Templates folder to the new profile.

These Instructions only cover the basics of creating a new profile, only do this if you need to as you will likely be spending a good few hours reconfiguring applications and so on.
Just remember all the files that are moved from the old profile need to go back into the same location on the new profile.

New Workout Equipment

After not working out at the gym for the last 3/4 months, I discontinued my gym membership due being unable to access the free weights and machines I wanted to due to the amount of people using the equipment at the times I attended which means I had to break up my sets and not workout the way I wanted to, another reason was it was costing me $80/month for this privilege.

Now that I didnt haveĀ  place to work out I decided what could I do to keep the level of fitness I had already attained without losing what I head already gained (which started to occur anyway), so I jumped on the net and started researching what other methods were available to keep fit, build up strength, and use whatever natural resources on hand without having to fork out to much money on free weights etc….

Well……, I discovered Kettlebells and exercising with your own body weight, the amount of information available just blew me away, especially with the explanations on how this can improve your cardiovascular system, endurance, along with strength… and you canĀ  integrate the bodyweight exercises along with using the kettlebells, also you use the kettlebells to help with strength endurance when using weights, wrestling, and numerous other activities.

All this new information on kettlebells and bodyweight exercising has really increased my enthusiam. I look forward to my workouts as I don’t have to drive to the gym or travel, all I have to do is pickup the kettlebell and workout on the front lawn/driveway, the park across the road, I can pullups on the swing in the park, tricep dips on the park benches, it amazing that with a little research, some enthusiam, and imagination you can use just about anything to exercise with.

I’ll be the first to admit, I have a LOT more to learn… and I am seriously looking forward it, Since I have discovered about kettlebells I bought my first one and I am just beginning to learn the basics, and wow it kicking my arse.

It has been 2 weeks since it has arrived, and I’ve combined that with the bodyweight exercises ansd wow I’m really starting to notice the difference, comparing this to the gym, I personally much prefer this.

Anyhow meet the lads I’m working out with…. a 12kg & 16kg kettlebell

A couple of weeks back I upgraded my mobile phone. The phone of the of choice ended up being a Apple IPhone 3G.
I like the phone, the sound quality is pretty good, internet access and web browsing is great, Telstra’s datapack pricing leaves a lot to be desired), and the phone casing is great, I just love the full black colour, the other thing I definitely like is the app store and itunes store(Not that I use Itunes for music, give me VLC, and winamp anytime).

The downside of buying an IPhone 3G is that you don’t have the ability to MMS, Transfer files using bluetooth, swap the battery out when it goes flat. Editing SMS messages and emails can be difficult if you do not pickup typing mistakes immediately, I found a touch screen lacks accuracy when trying to get the cursor to a certain spot, I’d much prefer some extra navigation Keys.

The ONLY other MAJOR thing about the IPHONE 3G is that if it is heavily used you can suck the life out of your battery quite easily, though there are ways to conserve battery life.

Other than the few negatives I wrote about the phone the menu navigation is easy, the phone is fast and responsive. Overall the phone is OK, I’m still wondering if I have made the right decision in getting one.

Houdini(Diamond Python) goes to the Vet

HoudiniOk, I own a Snake. Houdini is a Diamond Python (Morelia spilota spilota) that needed a visit to the vet for a checkup and to have his bottom jaw checked out due a growth(lump) that was starting to appear, and started to quickly grow in size.

Today, I scheduled a visit where Ilana who specialises in Exotic animals like reptiles, checked Houdini over and said the he was in great shape, and was in very good health another good sign is he was being rather feisty as he didn’t seem to appreciate the checkup, she said this is a good sign that the snake was currently in good health and not affected by this growth so far.

Anyhow, I’ve had to leave him at the Vet to have xrays on his mouth to find out if this is an infection(although, no signs of inection were found in the mouth), a tumor, or a deformity that has suddenly turned up and is affecting the bone structure on the side of his jaw, I will find out the results Monday evening, and hopefully the news will pretty reasonable.

I have to admit, I’m not looking forward to the vet bill… the xrays alone are $160

ahhhhh the joys of pets!! :)

Opening Excel files into Seperate Application windows

Since the advent of Microsoft Office XP, Microsoft changed the default behavior of how the Excel opened files. So for my reference and yours, perform the following instructions which will tell excel to open each spreadsheet file into a separate window.

1. In Explorer go to Tools > Folder Option

2. Choose the File Types tab then find XLS under Extensions. Highlight it and click the Advanced button.

3. Select Open then the Edit button.

4. Now in the Application used to perform action field go to the end and add a space followed by “%1″

5. Unselect the checkbox “Use DDE”

6. Click Ok, then Click Ok again.

Now go and test this using 2 excel files and you should find they will open in seperate windows.

Welcome!

Well I thought it was time to bring the blog back from limbo so that I can have a place to add my ramblings like the millions of other people who have something to say.

I’ve started off with a new look and layout(courtesy of the pixel theme). I’ll see how this looks and may make changes if desired.

anyhow I have no idea of what content that I will be adding in the future. I probably will start using this blog as an area to start my own little knowledge base/fountain of information for various things computer related, and possibly some recipes, cooking things and other things I like as well, plus any general thoughts etc……

I don’t even know what I might or may post… :)
